The
Codex Alimentarius is a series of food standards, codes of practice, guidelines and other recommendations developed by the Codex Alimentarius Commission.
The intention of these documents is to :
“Guide and promote the elaboration and establishment of definitions and requirements for foods to assist in their harmonization and in doing so to facilitate international trade.”
These standards and guidelines relate to various food issues from specific food groups, operation and product process management to the operation government regulatory systems for food safety and consumer protection.
Most countries take the Codex Alimentarius into consideration when developing their own standards and regulations to govern food safety and import control. Some countries have their regulation identical to Codex Alimentarius standard in particular areas.
